Chocolate Protein Muffins & Pumpkin Protein Squares

Chocolate Protein Muffins
1 cup ground oats,
2 scoops chocolate protein powder,
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/3 cup xylotil or stevia, (dont use the stevia in the big green bag, it has a bitter taste)
2 tbsp cocoa powder
2 tbsp chocolate chips( you can leave these out if you want)
1/4 cup nonfat Greek yogurt
1-4oz tub of berry or applesauce baby food
4 egg whites
1/3 cup unsweetened almond milk
Mix all together and fill your muffin cups about 3/4 full. Bake on 350 for 25-30 minutes, let cool 10 minutes to keep them from sticking to the pan.
Pumpkin Protein Squares
2 cups of ground oats ( I use regular plain oat meal and grind it up in my bullet)
2 scoops of vanilla whey protein powder ( If you want to reduce the carbs in the recipe, use 1 cup of oats and 3 scoops of protein powder) 2 tsp. cinnamon
2 tsp nutmeg
1 tsp all spice
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup of brown sugar blend xylotil or truvia ( you can use whatever sweetener you like, those are just my favorite )
4 egg whites
1/2 cup unsweetened almond milk
1 - 4oz of the baby food apple sauce 1-2 cans of pumpkin depending on how pumpkiney you want it ( not the pumpkin pie mix)
2 tsp vanilla
Mix all together until blended well. Put in a 9x13 pyrex dish and bake on 350 for 30 mins, let cool at least 10 minutes.
